Chia seeds are packed full of antioxidants, fibre and protein, and when paired with our refreshing, energising Lightning Green tea, make a delicious breakfast to get you up and going.
Makes 1 serve.
Prep time 5 minutes.
- 2 tbsp chia seeds
- 1/2 cup cold brewed Lightning Green tea (1 tea temple infused in 1 cup of cold water for 8 hours or overnight)
- 1 tbsp full fat coconut cream
- 1-2 tsp honey or maple syrup
- Seasonal fresh fruit (kiwifruit, berries, banana, stone fruit), to serve
Combine all ingredients (aside from the fruit) by shaking together in a small jar.
Leave for 2 minutes, shake again, then leave in the fridge for a further hour or overnight.
If the pudding is too thick, stir through a little more cold brew tea or your choice of plant-based milk.
Serve with fresh seasonal fruit and your favourite toppings (e.g coconut yoghurt, a sprinkle of granola and a drizzle of honey). If you're on the run, pop the chopped fruit in the jar after shaking for an easy breakfast on the go!
