Apple & Green Tea Muffins


Nourishing, gently sweet, and infused with the vibrant energy of our Lightning Green tea, these Apple & Green Tea Muffins are a perfect balance of comfort and vitality. Ingredients (makes 8-10 muffins)

• 1 heaped tablespoon (or tea bag) Lightning Green tea
• 230 ml milk (oat or dairy)
• 70g dehydrated apple, chopped
• 300 g wholemeal flour
• 2 1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 120 ml olive oil
• 160 g brown sugar
• 1 egg
• 1 teaspoon vanilla extract
• Zest from 1/2 lemon

Method  

  1. Heat the oven to 200°C. Prepare two muffin pans with liners, or coat with olive oil.
  2. Boil a kettle of water. Pour 120 ml of boiling water over the tea leaves (or bag) in a small saucepan. Let them steep for three minutes, then add the milk and simmer for about 10 minutes. 
  3. In a bowl or pan, pour 100 ml of boiling water over the dehydrated apple, cover, and let it soften while the tea is steeping.
  4. Meanwhile, mix the dry ingredients (except sugar) together in a large mixing bowl. 
  5. In a separate large bowl, beat together the oil, brown sugar, egg, vanilla and lemon zest. 
  6. Take the tea milk off the heat and strain (or just remove the tea bag). Mix the milk in with the other wet ingredients. 
  7. Drain off all the water from the apple; it should be more soft and spongy. Mix it into the wet ingredients.
  8. Pour the wet ingredients into the dry and fold together just until combined. Using a big tablespoon, drop heaped spoonfuls into the muffin cups (or oiled pan), leaving roughly 1 cm of room at the top.  
  9. Bake at 200°C for 15 minutes then lower the heat to 160°C and bake for another 10-15 minutes.
  10. Let cool on a rack for at least 15 minutes before eating.
