Ingredients (makes 8-10 muffins)
• 1 heaped tablespoon (or tea bag) Lightning Green tea
• 230 ml milk (oat or dairy)
• 70g dehydrated apple, chopped
• 300 g wholemeal flour
• 2 1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 120 ml olive oil
• 160 g brown sugar
• 1 egg
• 1 teaspoon vanilla extract
• Zest from 1/2 lemon
Method Â
- Heat the oven to 200°C. Prepare two muffin pans with liners, or coat with olive oil.
- Boil a kettle of water. Pour 120 ml of boiling water over the tea leaves (or bag) in a small saucepan. Let them steep for three minutes, then add the milk and simmer for about 10 minutes.Â
- In a bowl or pan, pour 100 ml of boiling water over the dehydrated apple, cover, and let it soften while the tea is steeping.
- Meanwhile, mix the dry ingredients (except sugar) together in a large mixing bowl.Â
- In a separate large bowl, beat together the oil, brown sugar, egg, vanilla and lemon zest.Â
- Take the tea milk off the heat and strain (or just remove the tea bag). Mix the milk in with the other wet ingredients.Â
- Drain off all the water from the apple; it should be more soft and spongy. Mix it into the wet ingredients.
- Pour the wet ingredients into the dry and fold together just until combined. Using a big tablespoon, drop heaped spoonfuls into the muffin cups (or oiled pan), leaving roughly 1 cm of room at the top. Â
- Bake at 200°C for 15 minutes then lower the heat to 160°C and bake for another 10-15 minutes.
- Let cool on a rack for at least 15 minutes before eating.
